Creamy Coleslaw

Not sure if I’ve mentioned this before, but I seriously love me some buttermilk :-)

Combine that with my love of coleslaw, and you get this recipe-

Creamy Coleslaw

1 c Buttermilk
1 c Mayonnaise
3 Tbsp Vinegar (I’ve always used white, but I’ve been meaning to try some good apple-cider vinegar)
3 Tbsp Lemon juice (I’ve used lime when I’ve been out of lemon, still yummy!)
3 Tbsp sugar (more, like double, if you like it sweet, I’m more of a tangy type of gal, and kind of a sugar minimalist)
1 tsp Salt
1/2 tsp Black pepper (more, or less, to taste)
2 (16 oz) Packages shredded coleslaw mix

Wisk dressing ingredients together, then fold in shredded cabbage/coleslaw mix.  Cover and refrigerate for an hour or two before serving.

Give it an extra stir, for good measure, before digging in.  Enjoy!

*We’re a big family, plus I often make this to bring somewhere to share (picnics!), you may want to just make 1 tiny little bag’s worth of coleslaw, if that’s your case, cut all the other amounts in half…

Oh, this looks fabulous. I love good coleslaw, and I have a head of cabbage I was just staring at not an hour ago, pondering what I was going to do with it. I even have buttermilk! And I NEVER have buttermilk! I’m so excited now!
